Designation for the self-employed enzymatic Resolution (autolytic = self-dissolving) of protein molecules and other cell constituents without the aid of bacteria, In the winemaking This usually describes the gradual dissolution of the dead yeast cells in the bottle fermentation from sparkling wine or predominantly at White wines in which the technique of lees is used. The thereby released amino acids and mannoproteins have a very positive effect on the taste and texture of the wine. The longer the wine stays on the yeast, the more of it flavorings dissolve (desired) in the wine and give this the typical yeasty and lively Taste.
