The champagne house located in the castle of the municipality Aÿ was founded in 1860 by the Colombian Edmond de Ayala under the name "Champagne Ayala Château d'Aÿ". He had married the niece of the Vicomte de Mareuil, who brought in the castle of Aÿ and vineyards as a dowry. After converting to an AG and several changes of ownership, the company became the property of the Ducellier family in 1948. Today it is managed by Jean-Michel Ducellier and his son Alain. They are traditional champagne that are dominated by Pinot Noir. There are also Blanc de blancs from Chardonnay. The champagnes are stored on the lees for at least two and a half, the vintage champagnes for five years before they come onto the market. The Cuvée de Prestige is called "Grande Cuvée", which is blended from Pinot Noir and Chardonnay. Three million bottles are stored in the cellars. About one million bottles are produced annually. After a long independence, the house was built in 2005 by Bollinger accepted.
