Ayala

The Champagne House, located in the castle of the municipality of Aÿ, was founded in 1860 by the Colombian-born Edmond de Ayala under the name "Champagne Ayala Château d'Aÿ". He had married the niece of the viscount de Mareuil, who brought in the castle of Aÿ and vineyards as a dowry. In 1948, after being converted into a public limited company and several changes of ownership, the company came into the possession of the Ducellier family. Today it is run by Jean-Michel Ducellier and his son Alain. It produces traditional champagnes dominated by Pinot Noir. But there are also Blanc de blancs from Chardonnay. The champagnes are stored on the yeast for at least two and a half years, the vintage champagnes five years before they are put on the market. The Cuvée de Prestige is called "Grande Cuvée", which is blended from Pinot Noir and Chardonnay. Three million bottles are stored in the cellars. About one million bottles are produced annually. After a long period of independence, the house was taken over by Bollinger in 2005.
