The champagne house with seat in the castle of the municipality Aÿ was founded in 1860 by the native Colombian Edmond de Ayala under the name "Champagne Ayala Château d'Aÿ". He had married the niece of Vicomte de Mareuil, who brought as a dowry the castle of Aÿ and vineyards. After conversion into an AG and several changes of ownership, the company came in 1948 in the possession of the Ducellier family. Today it is run by Jean-Michel Ducellier and his son Alain. It will be traditional champagne produced, dominated by Pinot Noir. But there are also blanc de blancs from Chardonnay. The champagnes store at least two and a half, the vintage champagne five years on the yeast before they come on the market. Of the Cuvée de Prestige is called "Grande Cuvée", which is blended from Pinot Noir and Chardonnay. There are three million bottles in the cellars. Every year about one million bottles are produced.
