Chemical substances for the specific control of bacteria. They belong to the large group of pesticides. The name is derived from "bacterium" and "caedere" (to kill). Death is caused by damaging the bacterial cell. Bactericides also play a role in plant protection or in combating microorganisms. They are hardly ever used in viticulture. The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
