Ca' Viola

The winery is located in the municipality of Dogliani (province of Cuneo) in the Italian region of Piedmont. It was founded in 1991 by Giuseppe "Beppe" Caviola, the first bottled wine was a Dolcetto. The vineyards cover 12 hectares of vineyards in the municipality of Montelupo Albese. They are planted with the red wine varieties Dolcetto, Barbera and Nebbiolo. They are cultivated according to natural, environmentally friendly criteria. Fertilization is carried out exclusively with natural substances with complete renunciation of chemical agents. For the top wines there is a yield reduction to a maximum of 2,500 kilograms per hectare. The red wines are fermented spontaneously at very low temperatures of 16 °Celsius with sometimes very long maceration periods of 7 days for Dolcetto to 40 days for Barolo. For certain wines, around 30% of the grapes are not pressed, following the Burgundy example. The use of sulphites is restrictive. In principle, no filtration takes place. Premium wines are the DOC wines Dolcetto d'Alba Barturot (30% whole grapes, 12 months in large wooden barrel, 6 months in the bottle) and Dolcetto d'Alba Bric du Luv (12 months in large wooden barrel, 6 months in the bottle), as well as the DOCG wine Barolo Sottocsatello di Novello (30% whole grapes, 36 and 12 months). About 55,000 bottles are produced annually, 50% of which are exported, mainly to the USA, Canada and Japan.
