calandre

French name for a special form of distillation in large production plants. The distilling raw materials are heated in the first step in interconnected containers with several hundred liters volume (the Calandres). Then the vapors containing about 20% alcohol are distilled to 70% alcohol. For example, in the Champagne the pomace brandy Marc manufactured.
