French term for a special form of distillation in large production plants. The raw materials destined for distillation are heated in interconnected containers with a volume of several hundred liters (the Calandres). Then the vapors containing around 20% alcohol are distilled to 70% alcohol. For example, in the Champagne the pomace brandy Marc manufactured.
