Austrian term (verbally "Kerzerlprobe") for an earlier very often used but extremely imprecise and therefore (life) dangerous procedure during the fermentation in one wine cellar by means of a burning candle carbon dioxide and thus determine the fermentation status. Even at a concentration of 5 to 7% carbon dioxide in the air, this is life-threatening for people as a result of fainting, but the candle only goes out at about 10%. In the past, the fermentation gases were also called Gärgitter in the basement door and / or over the steam pipe (a ventilation shaft). However, this could only be done without adequate mechanical suction, because the gas, which is heavier than the air, collected at the lowest point of the cellar.
