Austrian designation (orally "Kerzerlprobe") for a formerly very often used, but extremely inaccurate and therefore (life) dangerous method, during the fermentation in one wine cellar by means of a burning candle the content carbon dioxide and thus determine the fermentation status. Already at a concentration of 5 to 7% carbon dioxide content in the air, this is a life-threatening threat to humans due to an initial fainting, but the candle does not go out until around 10%. In the past, the fermentation gases were also known as so-called Gärgitter in the cellar door and / or over the steam pipe (a vent shaft) dissipated.
