Castle Saarstein

The estate is located in the municipality of Serrig (Saar area) in the German wine-growing region Moselle, It was founded in 1828 by a chief forester Ebenteuer and sold a generation later to the shipping company Hansen. His grandson built the imposing manor house on the Saarstein and from there led the transport company in Trier. In 1906, the construction of a villa, which now serves as a residence, was completed at the height of the Saarstein, from whose terrace you can enjoy a breathtaking view over Serrig and the Saar Valley. The Second World War with the construction of the western wall in Serrig changed the situation dramatically. On the estate lived only one steward who had to evacuate the house for military purposes. In 1956, the estate was sold to Dieter Ebert. This made with cellar master Erwin Hoffmann for the fact that the potential of the vineyards again used and the good again in the old condition was lifted. Since 1994, the estate has been managed by Christian Ebert, who had been responsible for the cellar since 1989, and his wife Andrea. Like his father he runs a "traditional, but also near-natural and nature-preserving" viticulture.

The vineyards cover ten hectares of vines in the sole-owned location Serriger Castle Saarsteiner, They are 96% with the Riesling, as well as some Pinot Blanc (3%) and Rivaner (1%) planted. All organic fertilizer is made using compost, straw and horse manure. The yields from the steep slopes hold despite the relatively dense tillering a low level of an average of 60 hl / ha, for which in addition to a short cut and the partly rootless, old vines are responsible. In the cellar since the year 2000 mostly on whole cluster pressing is set. The must is clarified in advance and fermented for the most part with natural yeasts. This is especially true for wines that are not dry. The fermentation takes place in stainless steel tanks, the expansion partly in the steel tank and partly in the large wood powder. The wines with residual sweetness carry a white bottle label (otherwise yellow). In suitable years also high predicates such as Trockenbeerenauslese and ice wines are pressed. Every year 50,000 to 60,000 bottles of wine are produced. Bottle-fermented sects are also produced that can be stored on the lees for up to six years. The winery is a member of VDP (Verband deutscher Prädikatsweingüter).
