Input and output register to be kept by every producer, trader and processor of wine, wine grapes, grape must and grape juice. Today, these are kept in electronic form, for which there are various software solutions. The following entries are mandatory in the cellar book: size and exact designation of the cultivated vineyard areas; quantity of own production of wine and grape juice as receipts; quantity of products purchased or delivered; date of receipt and dispatch as well as names and addresses of the entrepreneurs to whom products were delivered or from whom products were purchased; quantities blended; extent of enrichment; shrinkage including the quantity of withdrawn stock and own consumption; state inspection number; band number. This information shall be provided for each type of wine (same name, origin, vintage, grape variety and quality level). The cellar book is officially checked and is the basis for wine-legal matters.
