From each producer, distributor and processor of wine, wine grapes, grape and grape juice leading input and output directory. In the cellar book the following entries must be made: Size and exact description of the cultivated vineyard areas; Amount of own production of wine and grape juice as access; Amount of purchased or delivered products; Date of entry and exit as well as the names and addresses of the traders to whom products have been delivered or from which products have been purchased; Waste amounts; Extent of enrichment; Waste including the amount of withdrawn tank bottoms and self-consumption; state test number; Band number, This information must be given for each type of wine (same name, origin, vintage, variety and quality level).
