The winery is located in the municipality of Courthézon on the southern Rhône. Its origins go back to the 17th century. It is already run by the fourth generation of the Perrin family. The brothers Jean-Pierre and Francois Perrin have rigorously committed themselves to organic viticulture. The vineyards cover 119 hectares. From 69 hectares, a Châteauneuf-du-Pape is produced according to an old family recipe, which, along with that from Château Rayas, is one of the very best in the appellation. Two of the decisive factors for the quality are the low yield with a maximum of 30 hl/ha and the high age of the vines with over 50 years. After destemming, the mash is subjected to maceration (with steam to 80 °Celsius) to promote extraction of the tannins.

All 13 authorised varieties are used in the red wine; the proportion of Mourvèdre/Monastrell, at 30%, is relatively high. The others are Grenache Noir/Garnacha Tinta (30%), Syrah (10%), Counoise (10%), Cinsaut, Muscardin and Vaccarèse (5% each) and the remaining six varieties (5%). Fermentation takes place in traditional ashlar vats, there is no filtration, then the wine is aged for two years in oak barrels. A white version made from 80% Roussanne and 20% Grenache Blanc/Garnacha Blanca is also produced. On 50 hectares, a Côtes du Rhône "Coudoulet de Beaucastel Rouge" is produced from Grenache Noir, Mourvèdre, Syrah and Cinsaut, as well as a "Coudoulet de Beaucastel Blanc" from the varieties Bourboulenc, Marsanne, Viognier and Clairette. The company is a member of the renowned family wineries association PFV (Primum Familiae Vini).
