The vineyard is located in the commune of Pez in the Saint-Estèphe area of the Médoc (Haut-Médoc, Bordeaux). It was last classified as a Cru Bourgeois Exceptionnel in the Bordeaux classification according to the old system, which is no longer valid, in 2003. The estate was created in the 18th century from vineyards belonging to Château de Pez. In 1930, it came into the possession of Jean-Charles Cazes (1877-1972), who was succeeded by his grandson Jean-Michel Cazes (1935-2023). The JM Cazes family business also owns Château Lynch-Bages in Pauillac. Les Ormes-de-Pez was vinified there until 1981, when a new winery was opened. The vineyards cover 33 hectares and are planted with Cabernet Sauvignon (70%), Merlot (20%) and Cabernet Franc (10%). The long-lasting red wine is matured for 12 to 15 months in used Lynch-Bages barrique barrels.
