Chitinases

Name (also chitotriosidases) for enzymes occurring in many plant and animal organisms as well as in the human organism, with which chitin is split or broken down. They are formed to defend against pathogens and for digestion. In plants (such as the grapevine), resistance to fungi is thus achieved by destroying the structure of the fungi formed by the chitin. Glucanases have a similar effect against glucans. See also under chitin derivatives.
