Coconut

coconut (GB)

The typical aroma of the fruit of the coconut palm occurs in wines that have been matured in barrique barrels made of American or French Allier oak. It is mainly caused by various aroma substances such as lactones and sotolone. In the Indonesian Moluccas, the bitter-tasting juice of the fruit is fermented into coconut wine and a brandy is also distilled from it. See also under toast aroma.
