Damascenone

Chemical compounds as a component of a variety of essential oils belonging to the rose ketone family. Beta-Damascenone (β-Damascenone) belongs to the group of norisoprenoids and is produced by a biosynthesis from carotenoids. Despite its very low concentration, this substance is an essential factor in the fragrance of roses and an important chemical fragrance in the perfume industry. This substance occurs naturally in apple juice, apricots, strawberries, raspberries, blackcurrants(cassis) and grapes, as well as in the distillates cognac, rum and whisky (Scotch). It is one of the many aromatic substances in wine and gives flowery-sweet impressions of tropical fruits. Among other things, β-Damascenon is characteristic for the Riesling.
