The winery is located in the municipality of Ernst (Burg Cochem area - Terrassenmosel) three kilometres upstream from Cochem in the German Moselle growing region. The winery is run by Peter Dax, assisted by son Oliver. The philosophy of the house is: live from nature and with nature, always giving everything for a good wine. The vineyards cover four hectares of vineyards in the single vineyards Klostergarten (Cochem), Herrenberg (Valwig), Rathausberg (Bruttig), Kapellenberg (Fankel), as well as Kirchlay and Feuerberg (Ernst). Three quarters of the vineyards are planted with the white wine varieties Riesling (60%), Kerner, Müller-Thurgau, Bacchus and Pinot Gris, and one quarter with the red wine varieties Pinot Noir and Dornfelder. The steep terraces, most of which are difficult to work, are cultivated conventionally.

From the vineyard to the wine cellar, the selected grapes and the young must are carefully processed. The wines are vinified separately according to grape variety and left to their own devices as far as possible until bottling. For the steep-slope Riesling from the Valwiger Herrenberg, one third of the fermentation is spontaneous. It is bottled only after a long four-month ageing period on the fine lees. In the case of the Pinot Noir, a three-week maceration of the highly ripe grapes in small fermentation tanks is followed by 18 months of ageing in barriques. The wine is then bottled avoiding pumping and without filtration. About 40,000 bottles of wine are produced annually, about 10% of which is exported to Belgium. Various noble brandies (wine, marc, yeast, peach), liqueurs, grape seed oil and vinegar are also produced. The winery is a member of Generation Riesling and Breva Wein & Weg.
