dismantle

Negative description for the state of maturity of a wine in the context of a wine address. Such a wine has already clearly passed its peak in its development, is now steadily decomposing and losing quality. This is caused by chemical changes with negative effects on aroma, colour and taste. The first phase of this process is also overaged, the "final stage" is called dead (inedible). See ageing and bottle ageing for the ageing process and drinking maturity for the optimum time for consumption.
