The winery is located in the municipality of Châteauneuf-du-Pape in the area of the same name in the southern Rhône. The ancestors of the current owners have been cultivating a small plot of land with vines, olive and cherry trees since 1670. At that time, the business was run under the family name Féraud. The winery with its current name was founded in 1987 and is run by Paul Féraud and his daughter Laurence. The name "Pégau" refers to a 14th century clay wine jug with a beak, which was discovered during excavations around the Palais des Papes (former papal palace) in Avignon.

The vineyards cover a total of 23 hectares of vines. All 13 classic Châteauneuf-du-Pape grape varieties are cultivated. Of these, 17 hectares are devoted to Châteauneuf du Pape Rouge, which is divided into 11 plots. Vines over 80 years old are cultivated in the "Les Bosquets" parcel, which covers just over one hectare. There is also one hectare for Châteauneuf du Pape Blanc and six hectares for the vin de table "Plan Pégau".

For the red Châteauneuf du Pape, the unfermented grapes are macerated in traditional concrete tanks for two to three weeks. The wine then matures for at least 18 months in large and small wooden barrels. Only then is it blended with 80% Grenache Noir (Garnacha Tinta), as well as Syrah, Mourvèdre (Monastrell) and all other authorised grape varieties. The white Châreauneuf du Pape is blended from 60% Grenache Blanc (Garnacha Blanca), 20% Clairette, 10% Bourboulenc and 10% Roussanne and matures for six months in oak barrels. Other CdP red wines are produced under the names Cuvée Laurence, Cuvée Justine, Cuvée Maxime and Cuvée Réservée.
