The winery is located in the municipality of Calce in the French region of Roussillon. The owner, Gérard Gauby, is considered an icon of the area and the best winemakers of the South of France. The vineyards cover 42 hectares. After the turn to organic methods, the last consequence was the start of biodynamic viticulture in 1999. In the meantime, Gérard Gauby is one of the world's most important advocates of this philosophy. His maxim is: "I don't really want to keep anything else in the cellar than what I have planted in the vineyard". Fermentation takes place in large wooden fermentation vats and concrete tanks. Depending on the condition of the grapes, it is intuitively decided whether the vats are open or closed. Only yeasts from the vineyard are used. Spontaneous fermentation takes place very slowly and thus allows the extraction of the finest ingredients of the grapes. Afterwards the wine remains on the fine yeast for a very long time.

Most of the wine is matured in new, large wooden barrels; the use of new barriques has been greatly reduced. The use of sulphur is minimal. The long-lasting wines have an enormously high percentage of total extract. The flagships of the house are AOC red wines Côtes du Roussillon-Villages. These are "La Muntada" (young Syrah and old Grenache Noir and Mourvèdre vines), "Les Calcinaires" (Grenache Noir, Carignan, Syrah and Mourvèdre) and "Vieilles Vignes Rouge" (from over 50-year-old Grenache Noir, Carignan Noir, Syrah and Mourvèdre vines). Most of the wines are bottled as Côtes du Roussillon, for example "Les Rocailles" in white (Maccabeu, Grenache Blanc, Grenache Gris) and red (Grenache Noir, Mourvèdre, Carignan Noir). Furthermore, there is a Muscat de Rivesaltes, as well as IGP Côtes Catalanes country wines.
