The winery is located in the municipality of Winterbach in the German wine-growing region of Württemberg. The family's wine-growing tradition dates back to the beginning of the 16th century, but the current winery was only founded in 1949 and fully converted to viticulture ten years later. Jürgen Ellwanger focused on quality from the beginning, but a clear turn towards the production of top wines did not take place until the founding of the Hades Group in 1986, whose members are among the German pioneers in barrique age ing. The foundation for this was laid by Jürgen Ellwanger together with his son Jörg through meticulous vineyard work that is as close to nature as possible and also takes into account ideas from biodynamics. Son Andreas Ellwanger is responsible for the cellar technology. During vinification, the development is interfered with as little as possible.

The vineyards cover 20 hectares of vineyards in the single vineyards Altenberg, Burghalde and Sonnenberg (Schnait), Grafenberg (Schorndorf), Hungerberg (Winterbach), as well as Lichtenberg (Hebsack). They are planted with the red wine varieties Spätburgunder, Zweigelt, Lemberger, Dornfelder, Regent, Syrah, Merlot, Frühburgunder, Portugieser, Trollinger and Muskat-Trollinger, as well as the white wine varieties Riesling, Grauburgunder, Weißburgunder, Rivaner and Kerner. Bottle-fermented sparkling wines, liqueurs, noble brandies (marc, wine, fruit) and vinegars are also produced. The winery is a member of the VDP (Association of German Prädikat Wine Estates), as well as a founding member of the HADES barrique association.
