Esterification

Term (also ester formation) for chemical processes in which an alcohol or a phenol reacts with an acid to form esters. Such processes also take place during the ageing or bottle maturing of a wine. Special aromatic substances are formed in this process, which are known as tertiary aromas (see in this respect under Aroma). This changes the colour and taste of the wine. One of the examples is the ageing tone.
