and late, selective hand picking from October to November. After gentle pressing, a cool and slow fermentation takes place in a classic wooden barrel or in a stainless steel tank. This is followed by long storage on the lees until spring of next year. If the weather is suitable, ice wines are also pressed. Noble brandies (pomace) and fruit liqueurs are also produced.
