ouillage (F)

Term (also Beifüllen, Stiften, Toppen) for compensating for the loss of empty space in wine containers caused by shrinkage, as often occurs in wooden barrels in particular. This must be done especially for quality wines with a wine of the same origin. During ageing, this is done at least once a month. See also under winemaking.
