Designation for the solids retained on the filter medium and deposited on it during the filtration of a liquid. With increasing duration, a layer of particles forms, which increases the flow resistance of the liquid to be filtered, but leads to improved filtration performance. As the thickness of the filter cake increases, particle separation occurs mainly through it. The phenomenon can be explained by the fact that the distance between the individual particles is smaller than between the pores of the actual filter medium. The build-up is promoted in liquids with little solids content, such as wine, by filter aids. This is particularly important in precoat filtration. The picture shows the filter cake of a filter press (pressure filter for solid-liquid separation of suspensions).
Serious sources on the internet are rare - and Wine lexicon from wein.plus is one such source. When researching for my articles, I regularly consult the wein.plus encyclopaedia. There I get reliable and detailed information.
