Fisetin

A plant pigment (also called cotinine) belonging to the flavonoids, which is found in grapes and therefore also in wine. Studies carried out at the Californian "Salk Institute for Biological Studies" in La Jolla showed that the substance has a health-promoting effect by promoting long-term memory. It appears that certain signaling chains in the brain are stimulated, causing nerve cells to mature and differentiate.

The glossary is a monumental achievement and one of the most important contributions to wine knowledge. Of all the encyclopaedias I use on the subject of wine, it is by far the most important. That was the case ten years ago and it hasn't changed since.
