The Greek winery was founded by the agronomist Leon Karatsolas and the winemaker Yiannis Paraskevopoulos, who is famous in Greece. The name (Mother "Earth") was given after the Greek goddess of fertility and ancestress of all generations of gods. The philosophy is to focus exclusively on Greek varieties and to use their full potential. Before they built their own winery, they analysed which regions and native grape varieties have the most potential. They chose the island of Santorini (Assyrthiko) and Nemea (Agiorgitiko) in the Peloponnese. In 1994, the OPAP white wine of the same name was produced on Santorini under the label Thalassitis in collaboration with a winery.

In 1997, a winery was built in the Nemea sub-area of Koutsi and the production of wine began on seven hectares of vineyards. In the meantime, grapes are also bought from contract winegrowers. The OPAP red wine of the same name (from Agiorgitiko) is produced there under the Gaia Estate label. Red and white table wines are produced under the label Notios. A very light table wine rosé with the name 14-18h is pressed from Agiorgitiko, the name results from the short maceration period. Furthermore a retsina is marketed under the name Ritinitis Nobilis. A total of about 30,000 cases of wine (360,000 bottles) are produced annually.
