Glycolysis

glycolysis (GB)
Cellular metabolism in which, in the absence of oxygen, carbohydrates such as glucose (grape sugar) are converted by enzymes into other end products. Fermentation in wine is also called "anaerobic glycolysis". Glycolysis is a so-called metabolism. See also under glycosides.
