The winery is located in the municipality of Kürnbach (Kraichgau area) in the German wine-growing region of Baden. It was founded in 1999 by Helmut and Hannelore Grahm as a sideline business. Since 2010, the business has been run full-time by son Jochen Grahm. The vineyards cover eight hectares of vineyards in the Altenberg (Heidelsheim) and Lerchenberg (Kürnbach) vineyards in the
Baden wine-growing region and Kupferhalde (Oberderdingen) in the
Württemberg wine-growing region. They are planted with the white wine varieties Riesling, Pinot Blanc, Pinot Gris, Traminer, Muscat, Müller-Thurgau, Scheurebe and Auxerrois, as well as with the red wine varieties Pinot Noir, Cabernet Sauvignon, Black Riesling and Lemberger.
The use of resources is guided by the principles of
sustainable management. The choice of vineyard location is based on varietal soil management, which takes into account the orientation of the vineyard, the
soil type, the natural soil moisture and the condition and age of the vines. Artificial
irrigation is not used. Targeted sowing in late summer and
fertilisation with specially produced
compost help to maintain soil fertility. Gentle soil cultivation includes a permanent reduction in the use of chemical agents and the use of
pheromones to combat insect pests. The goal is healthy,
physiologically ripe and aromatic grapes for highly aromatic,
varietal wines and bottle-fermented sparkling wines.
The grapes are processed gently using gravity. The red wines are fermented in traditional, open
mash fermentation in vats and aged in stainless steel tanks or in barriques, depending on the type. The white and rosé wines are fermented in stainless steel tanks for up to four weeks after gentle
pressing, depending on the grape variety and quality of the must. Only quality wines are produced. The only exception is the "Grenzgänger", although the individual components comply with the quality wine regulations of both growing regions. Prädikat wine designations are dispensed with in favour of the winery's own classification with a "three-star system".
