This is understood in a winery during processing the transport or further transport of the grapes and the mash, and in extreme form also of the must and the wine by gravity alone from one container or work step to the next. This means that mechanical loads such as pumps are avoided wherever possible. Ideally, the grapes are delivered to the highest level of the winery. Due to their own weight, the grapes, the must and the wine pass one level lower with each work step. The result of this gentle processing are varietal and extract rich wines.
