The winery is located in the municipality of Theilheim (Maindreieck area) in the German wine-growing region of Franconia. Hermann Deppisch, the founder of the winery, was an external manager at the Bürgerspital and leased the first vineyards in 1989. After training at the Bürgerspital and studying oenology, the winery is now run as a sideline by his son Christian Deppisch. A hedge farm is attached. The vineyards cover four hectares of vines in the single vineyard Altenberg (Hammelburg). They are planted with the white wine varieties Silvaner,Pinot Blanc, Riesling and Blauer Silvaner, as well as with the red wine varieties Pinot Noir, Frühburgunder, Domina, Regent and Blauer Portugieser. Since 2008, the vineyards have been cultivated according to the rules of biodynamic viticulture certified by DEMETER.
Quality criteria are low yields and physiologically ripe and healthy grapes. The wines are fermented spontaneously after whole bunch pressing. In the cellar, there is as little intervention as possible and no fining. The wines are marketed in three lines: Alltagsfreude, Tradition and PER SE. The red wines are matured in traditional large wooden barrels. Since the 2012 vintage, predicate designations have been dispensed with. The premium wines include the single vineyard ALTENBERG! Silvaner, as well as Frühburgunder and Weißer Burgunder from the PER SE line. A Secco called "Seitensprung" is also produced.
