The winery is located in the municipality of Pirgos Kalistis on the island of Thira in the Aegean archipelago of Santorini. It was founded in 1996 by Haridimos and Konstantina Hatzidakis. Haridimos Hatzidakis (1964-2017), after studying to become an oenologist, had worked for the well-known Boutari company in Crete and Santorini, where he also met his wife. The vineyards on the volcanic soil had not been used since 1956 and had to be recultivated and replanted in a laborious work. After many years in an improvised cellar, a new underground winery with a naturally cool cellar was moved into in 2016. Hatzidakis is considered one of the most innovative and important winemakers in Greece. Since his tragic suicide in 2017, the winery has been run by his family and staff.

The vineyards cover ten hectares of vines. They are planted with the white wine varieties Aïdani Aspro, Assyrtiko (partly ungrafted) and Athiri Aspro, as well as with the red wine varieties Mavrotragano, Mandilaria and Voudomato. Grapes are also purchased on a large scale. The cultivation follows biodynamic principles with the use of organic fertilizers (mash, bird droppings) and avoidance of pesticides. The product range includes the OPAP wines Santorin dry and sweet as Vinsanto, the white wines Assyrtiko de Mylos and Assytriko de Louros, a Nykteri (Assyrtiko), a sweet Voudomato, as well as several Topikos Oinos (country wines). Some of the wines are bottled without filtration. They are exported as far as the USA.
