The winery is located in the municipality of Bermersheim vor der Höhe ( Bingen area) north of Alzey in the German wine-growing region of Rheinhessen. It was named after the famous mystic and healer Hildegard von Bingen (1098-1179) who worked here in the Middle Ages. The traditional winery is run by Hans and Felicitas Metzler, the fifth generation of the family to do so. The vineyards cover 20 hectares of vineyards in the single vineyard sites Hundskopf and Schloss Hammerstein (Albig), Hildegardisberg and Klosterberg (Bermersheim), and Kachelberg (Ensheim). They are planted with the white wine varieties Riesling, Pinot Gris, Pinot Blanc, Chardonnay, Silvaner, Müller-Thurgau, Scheurebe and Bacchus, as well as with the red wine varieties Frühburgunder, Dornfelder and Blauer Portugieser. Natural, environmentally friendly viticulture is consistently practised. Depending on the type of wine, they are matured in stainless steel tanks, in large wooden bar rels or in barriques. Grape juice, secco (sparkling wine) and bottle-fermented sparkling wine are also produced.
