The winery is located in the municipality of Obersulm-Willsbach (Württembergisch-Unterland area) in the German wine-growing region of Württemberg. The family has been cultivating wine for several generations. Walter Hirth started to vinify his wines himself in the early 1970s. After Helmuth Hirth took over in 2000, a company analysis was carried out with the aim of achieving a significant increase in quality. Vineyard sites, soils, microclimate, education system and production practices in vineyard and cellar were scrutinized and improved from the point of view of a restrictive quality grape production. In 2010, the Weingut Hirth GmbH was founded. For the purpose of further quality improvement, a viticultural technician was hired as field manager and a cellar master.

Today, the vineyards cover ten hectares of vines, most of which are located around the winery and on the Willsbacher Föhrenberg. They are planted with the red wine varieties Pinot Noir and Lemberger (Blaufränkischä), as well as the white wine varieties Auxerrois, Chardonnay and Riesling. Organic viticulture is practiced according to ECOVIN guidelines. The quality criteria are a rigorous yield limitation of eight grapes per vine, generous leaf assimilation area, hand harvest, no pumping and mechanical stress in the must stage, maceration, gentle pressing, biological acid reduction and a long maturation in large wooden barrels.
