Individual Yeast Designing

English term for a process in which individual pure-breeding yeasts are bred specifically for a farm. Yeasts are taken from the spontaneously fermenting must and strains with the desired strains are selected and propagated in the laboratory. At the next harvest, the yeasts required exactly for this farm are used. The risk of undesirable microorganisms is reduced and the vineyard-specific characteristics are preserved. A similar process can also be used to breed lactic acid bacteria for malolactic fermentation.
