Many of the substances contained in the later wine are already present in the grapes. Some are only formed during fermentation (especially alcohols) and bottle ageing (e.g. flavourings). With regard to the various ingredients in wine or the substances used in winemaking, there are the keywords

ADI (Acceptable Daily Intake) - substances of concern with the limit values
analytical testing - measurement methods
Flavouring substances - flavouring substances in wine
Colour - grapes and wine
Total extract - list of all ingredients (with their own keywords) in wine
Agents used in winemaking - authorised substances
Wine defects - causative substances
Sugar content - flavour sensations dry to sweet
