Inversion

This term has two meanings in viticulture:

Climate

Climatic phenomenon (inversion) in which the temperature, which normally decreases with altitude, increases abruptly at a barrier layer. Due to fog formation, it remains cold in the valley, but above the cloud line it is sunny and warmer. See also Climate and Weather.

Winemaking

Term for the conversion (also hydrolysis) of the multiple sugar type sucrose into its two building blocks or single sugar types fructose (fruit sugar) and glucose (grape sugar). See also invertase and invert sugar.
