, The line was handed over in 2002 by Johann Baptist Schäfer to his son Sebastian in the fourth generation of the family. This had been responsible for the vinification since 1997. The vineyards cover 6.3 hectares of vineyards in the layers Schlossberg
(Castle Layen), as well Goldloch
(Dorsheim). They are planted to more than 50% with Riesling, Pinot Noir, Pinot Blanc, Pinot Gris and Scheurebe. In winemaking, the primary goal is to produce terroir-stressed wines. There is a selective hand-picking and gentle further processing. Each wine undergoes an individual process to fully develop its unique natural character. Therefore, the questions of fermentation with natural or pure culture yeast, processing in steel tanks or wooden barrels and duration of yeast storage are decided on a case-by-case basis. The winemaker says "to some extent in consultation with the grape must". There are also noble sweet predicate wines produced.
