The term derives from the Latin "calcare" (= stare, stomp), in the broader sense that also means "with the feet stamp ". For centuries, it was customary to kick the grapes with their feet (see also under Lagar ). Pressing is an ancient name for the process of pressing and also for the mechanical device used for this, the press (lat. Calcatorium = Kelter).
