The winery is located in the municipality of Ober-Flörsheim (Wonnegau area) in the German wine-growing region of Rheinhessen. Dipl. Ing. Ralf Knobloch (viticulture and oenology) is in charge of telleting, trade support and export, his wife Sabine Knobloch is responsible for private customers, administration and organisation, and his brother Arno Knobloch (master winemaker) is in charge of vineyard, foreign trade and quality of the grapes. The vineyards comprise 32 hectares of vines in the single vineyards Aulerde, Morstein and Steingrube (Westhofen), Goldberg (Esselborn), Felsen (Dintesheim), as well as Höllenbrand (Gundersheim). They are 75% planted with the white wine varieties Riesling, Silvaner, Pinot Blanc, Pinot Gris, Müller-Thurgau, Bacchus and Auxerrois, and 25% with the red wine varieties Pinot Noir, Dornfelder, Portugieser, Regent, Lemberger, St. Laurent, Cabernet Mitos and Dunkelfelder. This results in around 150,000 vines.

As early as 1988, the parents Klaus and Ute Knobloch laid the foundation for organic viticulture. Since then, the vineyards have been cultivated according to the guidelines of the organic association ECOVIN. The organic wines are vinified according to their origin and variety. In the cellar, too, synthetic aids are completely dispensed with. For the most part, spontaneous fermentation takes place with the vineyard's own yeasts. The destemmed red wine grapes go through the classic mash fermentation. The red wines are mainly aged in large wooden barrels, the "KNOBLOCH SK" line in new barriques for up to 18 months.

The chilled fermented white wines are vinified with maceration. The premium line "Edelstein" comes from the best single vineyards in Westhofen with extremely low yields of 25 to 30 hl/ha. These are the red wines "TURMALIN" (Pinot Noir), "VIOLAN" (Regent) and "STERNGRANAT" (Dornfelder), as well as the white wines "JADE" (Riesling), "ACHAR" (Pinot Blanc), "FEUEROPAL" (Pinot Gris) and "EDELTOPAS" (Auxerrois). Grape juice, sparkling wine and yeast brandy are also produced.
