The Knoll winery is located in the wine-growing community of Unterloiben in the Lower Austrian wine-growing region of Wachau. It has been run by the Knoll family for several generations. In 2014, a completely new winery was opened, which is located behind the old winery and is connected to the old wine cellar via a tunnel. The winery is run by Emmerich Knoll Jr. and his wife Monika. The vineyards cover 16 hectares in the Wachau vineyards Kellerberg, Kreutles, Loibenberg and Schütt, which bear the Vinea designations (Federspiel, Steinfeder, Smaragd), as well as Pfaffenberg in the neighbouring wine-growing region of Kremstal. The vineyards are planted with 45% each of the main varieties Grüner Veltliner and Riesling, the rest with Gelber Muskateller, Gelber Traminer, Chardonnay and Pinot Noir.

For decades, the bottle labels have been adorned with Saint Urban, the patron saint of winegrowers. The wines are matured in stainless steel tanks or in large wooden barrels according to the terroir. A wide range of almost 30 wines is produced, nine of which are Rieslings and nine Veltliners. The Prädikat wines and Smaragde wines are not marketed until September of the following year. The flagships of the house are Grüner Veltliner Schütt Smaragd, Grüner Veltliner Vinothekfüllung, Riesling Schütt Smaragd and Riesling Vinothekfüllung. The sweet Prädikat wines Auslese, Beerenauslese and Trockenbeerenauslese, which are produced in years with suitable weather conditions, are a speciality. Around 150,000 bottles are produced annually. The winery is a member of the Vinea Wachau Nobilis Districtus winegrowers' association, whose chairman has been Emmerich Knoll jun. since 2012. The restaurant "Loibnerhof", which is adjacent to the winery, is run by cousin Josef Knoll.
