Kouloura

Greek term (also Koulouri or Klada) for a special vine training system practised on the two Aegean Cyclades islands of Paros and Santorini. These are the autochthonous varieties Aïdani Aspro, Athiri Aspro and Assyrtiko. The canes are twisted into a circle after pruning in spring; the shape of the bushy vines is reminiscent of baskets, wreaths or large bird's nests. The outward-growing leaves protect the grapes on the inside against the perpetual strong wind, whereby the summer Meltemi from the north with its fine grains of sand is particularly feared. In addition, water from the very rare rainfall, especially in summer, collects in the baskets, which often sit in hollows.
