The French winery is located in the commune of Vartus/Blancs-Coteaux (Département Marne) in the Champagne region. It is run by Sophie and Pierre Larmandier. The vineyards cover 15 hectares of vines in 17 individual plots in the Côte des Blancs area. They are planted with the varieties Chardonnay (85%) and Pinot Noir (15%). Biodynamic viticulture is practised. Plant teas are sprayed by helicopter. The entire production follows the rules of the ManuVin quality philosophy. Yield reduction is achieved through appropriate measures. Fermentation takes place spontaneously with the vineyard's own yeasts in large wooden barrels. The blend is decided individually each year after tastings. The reserve wines, which are matured in Austrian oak barrels, make up 30 to 40% of a cuvée. The wines are bottled in July and undergo secondary fermentation. After disgorgement, the bottles are stored for another six months before being put on the market. They are vinified very dry with a maximum of 6 g/l residual sugar (brut nature or extra brut). The premium products of the house include "Longitude" (100% Chardonnay, 4 g/l dosage) and "Terre de Vertus" (100% Chardonnay, 0 dosage). A red wine AOC Coteaux Champenois "Vertus Rouge" is also produced.
