Quality criteria are careful cutting and leaf work, yield restriction and selective hand selection of healthy, fully ripe grapes. After gentle pressing, most white wines ferment in steel tanks. Some varieties of Burgundy are aged in large oak barrels or oak barrels. The red wines ferment with controlled heat on the mash and are aged in large oak barrels or barriques.
