Name (also Eichwein, Richtwein) for a wine with a wine review, which is used to determine the level at which the evaluation of all other wines to be tasted is based. This is to avoid that ratings are too far apart, which can also happen to experienced tasters. A level wine is served at the beginning of a professional tasting. The tasters agree on a certain number of points as a benchmark or guideline for the evaluation of the following wines. The level wine is therefore an aid for the tasters to maintain their own level and not to fluctuate too much.
