Mash taste

Term (also comb, rape, stem or pomace taste) in the context of a wine address for a rough, scratchy taste. It can occur when too many bitter tannins from the grape structure (rape/crest) get into the wine during pressing, especially during whole bunch pressing and/or whole bunch fermentation due to excessive leaching. In any case, this is a defect in the taste of the wine. In the case of a grape marc spirit, however, the pungent taste impression is understood positively and described as grape marc-like.
