Mont du Toit

The South African winery is located on the outskirts of the city Wellington at the foot of the Hawequa mountain in the same Ward (District Paarl. Coastal region ). It was founded in 1997 as a German-South African joint venture of Stephan du Toit, Bernd Philippi from the winery Koehler-Ruprecht (Palatinate) and Bernhard Breuer Rheingau). The total possession covers approximately 40 hectars, of it are 27 hectares vineyard exclusively with red wine types planted. These are Cabernet Sauvignon. Merlot. Cabernet Franc. Shiraz. Alicante Henri Bouschet, Mourvèdre ( Monastrell ) Petit Verdot and Tinta Barroca, The traditional wine production is based on the philosophy of a "low-tech" (simplicity as a counterpart to "high-tech"). By thin out reduced yield are basically hand-picked. The maceration takes place at low temperatures and can last up to 30 days to deepen both color and taste. The red wines are after the malolactic fermentation developed up to 24 months in mainly French Barriques Barrique without any further intervention.
