Mont du Toit

The South African winery is on the outskirts of the city Wellington at the foot of Hawequa Mountain in Ward of the same name (District Paarl. Coastal region ). It was founded in 1997 as a German-South African joint venture by Stephan du Toit and Bernd Philippi from the winery Koehler-Ruprecht (Pfalz) and Bernhard Breuer Rheingau) was founded. The entire estate comprises around 40 hectares, of which 27 hectares are planted exclusively with red wine varieties. These are Cabernet Sauvignon. Merlot. Cabernet Franc. Shiraz. Alicante Henri Bouschet, Mourvèdre ( Monastrell ) Petit Verdot and Tinta Barroca, Traditional wine production is based on the philosophy of "low-tech" (simplicity as a counterpoint to "high-tech"). By thin out reduced yield are basically hand-picked. The maceration takes place at low temperatures and can last up to 30 days to deepen both color and taste. The red wines are after the malolactic fermentation aged up to 24 months in mainly French barriques barrique without any further intervention.
