Mont du Toit

The South African winery is located on the outskirts of the city of Wellington at the foot of the Hawequa mountain in the Ward of the same name (District Paarl, Coastal Region). It was founded in 1997 as a German-South African joint venture by Stephan du Toit, Bernd Philippi from the Koehler-Ruprecht Winery (Palatinate) and Bernhard Breuer Rheingau). The total estate comprises around 40 hectares, of which 27 hectares are exclusively planted with red wine varieties. These are Cabernet Sauvignon, Merlot, Cabernet Franc, Shiraz, Alicante Henri Bouschet, Mourvèdre(Monastrell), Petit Verdot and Tinta Barroca. The traditional wine production is based on the philosophy of a "low-tech" (simplicity as an antipole to "high-tech"). The yields, which are reduced by thinning out, are in principle hand picked. Mash fermentation takes place at low temperatures and can last up to 30 days to deepen both colour and flavour. After malolactic fermentation, the red wines are aged for up to 24 months in mainly French barriques barriques without any further intervention.
