Occhio di Pernice

Italian name for a rosé-like wine that is pressed from red wine grapes with a short maceration period to a light red colour. It means "partridge's eye" because the salmon to bronze-coloured wine resembles the red eye ring of a partridge. The name is most commonly used for Vin Santo. These DOC areas are Vin Santo del Chianti, Vin Santo del Chianti Classico, Vin Santo di Carmignano and Vin Santo di Montepulciano. The French term Oeil de perdrix has the same meaning.
