Oeil de perdrix

Protected designation of origin for a rosé wine from the Swiss cantons of Neuchâtel and Valais. It means "partridge's eye" because the salmon to bronze-coloured wine resembles the red eye ring of a partridge. It is made from Pinot Noir with a short maceration period. In Switzerland, the term Süßdruck is also commonly used for such a wine. In Italy, the term Occhio di Pernice is used with the same meaning for a rosé-coloured Vin Santo.
