Optical turning ability

Property of certain substances such as liquids and solutions to rotate the polarization plane of light. The type of rotation is characteristic for the substance and thus enables precise identification. The concentration of solutions can thus be determined by measurement (polarimetry). In 1815 the French physicist Jean Baptiste Biot (1774-1862) discovered the plane of polarisation of light in sugar, which makes it possible to determine the content of sugar in liquids.
