The winery is located in the municipality of Wahlheim (Wonnegau area) in the German wine-growing region of
Rheinhessen. The traditional family business is run by Volker and Cornelia Oswald. After completing his dual studies in Neustadt an der Weinstraße and internships at the
Wittmann and Peth-Wetz wineries, nephew Simon Müller-Oswald is responsible for the cellar. He will take over the business in the foreseeable future.
The vineyards cover a total of eight hectares of vines, some of which are very old, in the single vineyard Schelmen with 4.5 hectares (Wahlheim) as well as
Fischerpfad and Goldberg (Alsheim). The most important red wine varieties are Pinot Noir and Cabernet Mitos, the most important white wine varieties are Riesling, Chardonnay, Pinot Blanc and Pinot Gris. The vineyards are cultivated close to nature according to the company motto "As much as necessary, as little as possible". Above all, these are targeted quality-enhancing measures with sparing use of machinery and organic
fertilisation.
The white wines are mostly fermented and stored in stainless steel at led low temperature to emphasise fruit and freshness. More and more wines are fermented
spontaneously with the vineyard's own yeasts. The red wines go through the traditional
mash fermentation and mature in large wooden barrels. Special qualities mature for at least 12 months in barriques. The sparkling wines ferment or mature in the bottle for at least nine months. The most important wines are the estate wines Riesling dry and Cabernet Mitos dry as well as the premium
wine Spätburgunder Wahlheimer Schelmen Barrique dry. The winery, in the person of Simon Müller-Oswald, is a member of the young winemakers' association Generation Riesling (German Wine Institute).
