Paradis

French term (paradise) for the cellars of the cognac houses, where the best and finest products often mature in oak barrels for several decades and in extreme cases even up to a hundred years or longer and are then used for the blending of the top products. A proportion of the cognac (up to 5% per year) evaporates through the pores of the barrels; this loss is known as the " part des Anges" in French. This quantity must be replaced, this replacement is called "Réserve des Anges". See also under distillation and a list under spirits.
