Pekmes

Common name in Turkish Cappadocia (also Pecmec, Pekmez) for a honey-like grape syrup made from grape must. This is used in Turkey (mostly after acid extraction) by the peasant population as a spread on bread and as a substitute for sugar and honey. A similar product is the Greek sweetener Petimezi. Other products made from grape must are Churchkhela (dessert from Georgia) and Hardaliye (drink from Thrace).
